Beechwood students hold annual waffle charity fundraiser and break record for Emergency Shelter

Beechwood High School students have broken a school record for a tasty tradition.

The students’ annual waffle charity fundraiser has brought in $1.380. The proceeds go to the Emergency Shelter of Northern Kentucky, based in Covington.

“We were hoping to raise a thousand dollars,” said teacher Matthew Behrensmeyer, who started making waffles at 5:30 am.

Behrensmeyer and students from the National Honor Society, Student Council and Northern Kentucky Youth Advisory Board served up about 400 waffles.

“I like to think of it like a holiday meal where everybody’s pitching in and helping out and excited to be around each other,” he said.

“We made a ton of waffles, and all a sudden, they were all gone,” said Eden Alexander a junior. “The support from our students was amazing.”

Behrensmeyer’s secret ingredient: putting white chocolate chips into the batter. “That way, we don’t need syrup and the kids can eat them with their hands,” he said.

Behrensmeyer is confident the kids would still scarf up all the waffles even if they were plain.

“They talk about the ‘Beechwood family’ and it’s very much true here,” Mr. Behrensmeyer said. “It’s awesome to see”

Student Abby Brand loves supporting the Emergency Shelter.

“It’s a really great place,” said junior Abby Brand. “It’s really fun to see the whole school supporting something so great as the Emergency Shelter,”

“It’s nice to do something as fun as waffles to help somebody,” Alexander said.
